Hola!

I'm about to buy some 8GB HyperX Fury RAM at 2400 Mhz

My doubt is that the currently available model of RAM at hand is this: HX424C15FB/4

And my Gigabyte Z390 Gaming X motherboard supports these HyperX Fury 8gb 2400Mhz models
http://download.gigabyte.us/FileList/Memory/mb_memory_z390-gaming-x_20190415.pdf
HX424C15FB / 8
HX424C15FB2K4/32
HX424C15FB2K2/16
HX424C15FB2 / 8
HX424C12PB3K4/32
HX424C12PB3K2/16
HX424C12PB3/8SS

In other words, can this model that does not appear in the compatibility catalog of my motherboard still work? Is it a newer RAM that did not load into the system?
How is this RAM issue, can I load any 8 gb HyperX Fury on it? it's the same? I do not understand.

Check the RAM packaging and see if it says "DIMM" or "SODIMM." Desktop computers can only use "DIMM" while laptops must use "SODIMM". You can also tell the difference between a RAM DIMM and SODIMM stick by its size.
