Pokémon Let's Go will not have more versions, at the moment
Pokémon Let's Go was an experiment, but they don't plan to do more. They do not rule them out in the future but it is nothing close.
Pokémon Let's Go Pikachu and Pokémon Let's Go Eevee were unique installments for the Nintendo Switch. A few remakes of the original Pokémon Red, Pokémon Blue and Pokémon Yellow that remade the original map of the Game Boy games and introduced many changes. They were not the main installments of the franchise that fans expected, but that did not prevent them from having good sales.
They were just an experiment but they could come back
On the possibility of his coming back, series director Shigeru Ohmori commented that Game Freak has no plans to make a new batch of Let's Go subseries games. The natural thing would be for the new deliveries to take place on the Johtho continent, where the Gold, Silver and Crystal deliveries were located.
But that won't happen anytime soon. They just finished their little game Little Town Hero, and they are finishing Pokémon Sword and Pokémon Shield. That means it won't be easy to see those Let's Go at Johto next year. But in Game Freak they do not rule them out if they see that there are many people who want more games in that line.
But one thing that would prevent it is whether or not there is a need to do them. Pokémon Let's Go Pikachu and Evvee were made for a reason: to introduce Pokémon Go players to the Nintendo Switch so they can switch to Sword and Shield. Nintendo wants to turn those mobile players to console games and the games in which Eevee and Pikachu accompanied you and the original game conformed to the mechanics of Pokémon Go is the game that acts as a bridge. They already have the main line in the crosshairs of everyone who played Pokémon Go.
